Instructions

Soaking lentils overnight can help improve digestion and nutrient absorption. The soaking process helps break down naturally occurring compounds like phytic acid and makes the lentils easier for the body to digest. It can also help reduce cooking time and support better mineral absorption. To soak lentils, simply place them in a bowl, cover with plenty of water (about 2–3 inches above the lentils), and let them sit overnight or for about 8–12 hours. Before cooking, drain and rinse them well under fresh water.

1. Heat 1 tbsp of olive oil in a large pot over medium heat. Add the diced onion and chopped celery and sauté for a few minutes until softened.

2. Add carrots and flavor
Add the sliced carrots and a splash of liquid aminos along with the tomato sauce. Continue sautéing for a few minutes to develop flavor.

3. Add remaining ingredients
Stir in the diced potatoes, soaked lentils, thyme, salt, and pepper. Mix everything well.

4. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 25–30 minutes, or until the lentils and vegetables are tender.

5. Finish with coconut milk
Stir in the coconut milk and let the soup simmer for a few more minutes to blend the flavors.

6. Serve and enjoy
Taste and adjust salt and pepper if needed. Serve warm.
